Coffee from Cauca: This Red Bourbon coffee comes from Colombia’s Cauca region in the south of the country. Unlike many of Colombia’s mountainous coffee areas, Cauca is relatively flat. That means the coffee grown here benefits from more stable and consistent conditions, which is a big win for quality.

The man, the legend: The cherries for this lot are sourced from local farmers near the legendary Granja Paraiso 92, a farm owned by this lot's producer--the master, Wilton Benítez. In case you're wondering, the 92 in Granja Paraiso 92 refers to Wilton's ambition to cultivate coffee scoring 92 points and above.

Who is Wilton Benitez?: With a background in chemical engineering, Wilton balances the intricate art of coffee processing and experimentation. Wilton's journey to 'Coffee Icon' began as the Quality Control manager at Supracafe Colombia. Today, Wilton holds the Q grade and Processing Professional title at Finca Granja Paraiso 92. This position sees Wilton manage the facilities and pioneer new processing methods that employ cutting-edge technology. His title reflects his advanced knowledge of coffee cultivation and processing.

Tradition and family: Wilton's brothers also play vital roles in farm management and developing and continually improving specialised machinery for their unique 'brand' of coffee. Collectively, they bring over 25 years of experience in coffee cultivation and over 15 years of dedicated research in coffee microbiology. Truly a coffee where science meets art!

Post-harvest: Once harvested, the cherries are brought to Wilton’s state-of-the-art processing facility near the town of Piendamo. Here, he gives the select cherries a 36-hour fermentation before being depulped, washed, dried, and carefully packed for export.
