We are very excited to be running this delicious coffee from Huver Castillo’s El Paseo’s farm in Colombia. Get ready for notes of French Earl Grey, Fruit Loops and Orange Zest.

Finding X: Huver Castillo until recently (2015) was a Maths teacher in Narino, but coffee has always been in his blood. Huver is a third generation coffee grower having the opportunity to work alongside his father at the family farm El Paseo. El Paseo farm has been in his family for 20 years and is one of three farms the family owns. El Paseo is located near Buesaco and overlooks the Valley of Buesaco along the Sumapaz trail. 

An Exponential Process: Just like all great coffees, the process of the Rocket Flower coffee from El Paseo Farm begins with the careful selection of high quality and ripe Caturra Cherries. 

To kick things off the cherries undergo a 36 hour pre-fermentation before they are floated and disinfected. This process uses 2% sea salt to the total water volume in the hopper which assists in sorting low density defects as well as disinfecting the cherry skins naturally. 

Beans are then moved to stainless steel tanks for anaerobic fermentation. After being pulped beans are then moved to a second hopper, leachates are collected and 200 liters are used per fermentation tank with the addition of enzymes. Tanks holding up to 2800 kilos of coffee are left to ferment for 6 days before being mechanically dried in silos for 2-3 days. The silos hold stable temperatures under 38 degrees, ensuring ideal moisture levels. We aren’t done yet - to guarantee consistency and quality of coffee the coffee then undergoes a 15 day stabilization period.
