Processing Method: Fully washed

Gakuyu-ini is the only factory of the Thirikwa society and the most highly payed farm in Kenya three years running. They produce an exemplary Kenyan coffee - big in fruit, body and character. These beans were hand sorted, washed and dried on raised beds for eight to fourteen days before they got to us. We hope you enjoy them!

Notes of blackcurrant, cranberry and peach with bright acidity and a syrupy mouthfeel.

Roasters Notes

The Thirikwa Roasts very consistently. It takes a steady application of heat throughout the entire roast. This coffee “cracks” earlier than normal on our Dietrich roaster and there for we end the roast at a lower temperature than we normally would with a washed coffee.

Brewers Notes

15g ground medium-coarse and 250g of water at 93 degrees (1:16 ratio).

Pour in 3 stages as follows 30g-120-90g aiming for a 2:30 draw down.

Expect notes of blackcurrant, cranberry and peach with bright acidity and a syrupy mouthfeel.

Custom Water

In our search for balance we combined a low carbonic hardness of 10ppm bicarbonate and 70ppm of general hardness - accentuating the acidity and sweetness.
