This naturally processed Colombian coffee By producer Jairo Arcila is 100% castillo, hand picked selecting only the ripest cherries. His coffees have been excellent in the past and this one is no different!
The processing method of this coffee lends big cherry liquor notes followed by strawberry, nectarine and cacao nibs
Roasters notes
We hold the heat on a high gas setting for fairly long time compared to other coffees we roast for filter. As we approach colour change, we start to back off the heat and steadily decrease for the remainder of the roast. We aim for a 12% development time ratio with a total roast time of 10.45 to 11 minutes in length.
This coffee is roasted on our 12kg Diedrich.
Brewers notes
A pour-over recipe of 15g dry dose to 225g water at a medium ground setting is recommended with pouring done in stages of 30g, 95g, 50g and 50g with 30 seconds apart.
Custom Water
This coffee is very sweet with delicate malic acidity, so we use a water with very low carbonic hardness of 10ppm, to bring the acidity out in the cup, and 80ppm of generall hardness, (calcium and magnesium) to accentuate the sweetness, and flavours of nectarine and strawberry, with a cacao finish.
