This coffee is grown and harvested by Hector Zuniga, its harvesting follows a strict ripeness criteria. The cherries are floated, hand sorted, dry fermented for 20 hours and finally dried on raised beds with the pulp on. This is the first honey lot processed by Hector and we look forward to many more.
