Finca Aurora is surrounded by natural forests, rivers and lakes giving the farm excellent natural sources of nitrogen rich water. The ripe cherries are picked and fermented anaerobically, without the use of air. Removing the oxygen initiates a unique fermentation which lends exotic aromas as well as red fruit and winey flavours to the bean.

The processing method of this coffee lends big cherry liquor notes followed by strawberry, nectarine and cacao nibs


This coffee is roasted on our 12kg Diedrich.
